    1. Knead the dough until all the flour is gone, then add 3 tbsp. vegetable oil, and then continue kneading. Knead with a spoon until the mixture sticks to your hands. Knead the dough for 3 minutes. Then, we send the dough to proof, covering it with cling film, for 1-1.5 hours.


    1. When the dough has risen, grease the table with oil and lay out the dough. We also grease our hands with oil to prevent the dough from sticking to our hands. Form balls the size of a chicken egg. Let it rest for 10 minutes. During this time, our balls will increase slightly in diameter.


    1. Pour vegetable oil into a frying pan and heat it. We take a blank of donuts, make a hole in it, and put it in the oil. The oil should cover the crumpets to the middle. The crumpets are fried on all sides until they acquire a golden color.


    You need to regulate the temperature of the oil: if you heat it too much, the crumpets will burn; if you don’t heat it enough, they won’t rise well.

    1. Remove excess fat from the resulting donuts on a paper towel. The products are sprinkled with powdered sugar, if desired.

    3. Mix the egg mixture with kefir mixture and mix everything.

    4.Now, add flour little by little, 1 glass at a time, and mix after each glass. This is done so as not to overdo it with flour.

    Because the eggs are different in size, or a fuller spoon has been filled with one or another ingredient. Using the last glass of flour, adjust the hardness of the dough. The dough turns out soft and slightly sticks to your hands.


    1. Divide the dough into 3 parts. Roll out a circle, 1 cm thick.


    We cut out the products using any molds or a glass - circles; they can be cut into 4 or 6 parts.

    • Dry yeast – 10 g
    • Eggs - 1 piece
    • Sugar – 80 g
    • Salt – ½ tsp.
    • Butter – 60 g

    • Strawberry jam – 300 g, the quantity can be adjusted depending on the filling of the donuts

    2. Be sure to sift the flour and set aside about 100 g for later adding to the dough. Combine with sugar, salt, vanillin and mix.


    1. Make a small well in the flour, beat in the egg and add the yeast. Let's start kneading the dough. When the dough begins to thicken, softened butter is added to it. Little by little add the remaining flour.
    1. Sprinkle the table with flour and dump the dough from the dishes, continue kneading on the table. The dough turns out soft, elastic, but does not stick to your hands. Make a bun from the finished dough, place it in a bowl, and cover with film. Leave to rest in a warm place for 1 hour. During this period, the dough can rise 2.5 times.
    1. Dust the table with flour, lay out the risen dough, and roll out a circle 1 cm thick.


    Circles are cut out using a round shape (glass). Knead the remaining dough again and cut out circles. This dough makes 14 donuts. Let them proof, covered with film, for 20 minutes.


    1. 5 minutes before the end of proofing, pour oil into the frying pan and heat over high heat. With the heat reduced, place the donuts in the oil; the dough is very delicate, so you need to be careful.

    1. Prepare the dough. To obtain choux pastry, pour water and milk into a saucepan. Add salt, sugar, vanilla sugar. Add butter, mix everything and put it on the stove.
    2. Sift all the flour.
    3. When the milk mixture boils, gradually add flour, stirring continuously, using a wooden spatula. Stir until a light coating appears on the sides of the pan. Remove the dough from the heat and transfer to a bowl.
    4. Combine the dough with eggs, add one egg at a time. Beat in one egg and stir, then the next one, and so on for all 4 eggs. Add cognac.


    5. The dough should be elastic. Mix everything, cover with film and let rest for 15-20 minutes.


    6. Pour enough vegetable oil into a saucepan to cover the donuts and heat up.

    7. Place them in the oil (use 2 teaspoons) like this: - first scoop the dough with one teaspoon, then transfer it to the second, and dip it in the oil.

    When placing donuts in oil, be aware that the dough will increase in volume.


    8. Donuts need to be constantly stirred for even frying.
